isaiah came home early from school yesterday with a sore throat and fever. fabulous. we immediately ran to the doctor to get swabbed for strep. of course, we found out this morning that it came back positive. sooooo...isaiah stayed home from school today. i kept mikey home just out of pure laziness...i didn't want to get everyone dressed just to take mikey to school. preschool doesn't really count as school, right? thank you. you can mail me my mother of the year award.
anyway, we ventured out to the pharmacy...me and all four kids. fun times. they actually did really well, even with having to wait 30 minutes for the rx to get filled and then waiting in a line 25 people long just to pick it up. but, for some reason, i feel like i just ran a marathon. whenever i take these kids anywhere that requires waiting...my heart rate definitely goes up for a little while. needless to say, i put my tennies away when we got home and skipped my run. {kinda feeling guilty about that}
as a reward for good waiting...we made cookies this afternoon. i am so happy that i've finally found the perfect cookie recipe. like, no kidding. the basic cookie dough is perfect...and you can mix in whatever delicious little pieces of heaven you want. we usually do white chocolate chips {heavenly}, but today we went with semi-sweet chocolate chips and m&ms - chosen by the boys since these cookies were their reward.
so what do you do when you have a bowl with just a little bit of dough leftover, but not enough to make another batch worthwhile?
scoop the dough out and eat it with a spoon. duh.
i have not the slightest clue about isaiah's face below. he is definitely a strange one, i tell you.
this boy has a sweet tooth, just like his mommy.
mmmmmmm.....cookies
here's the recipe!
double chocolate chip cookies
gather your ingredients
- 1 stick (1/2 cup) of butter (room temp)
- 1 cup light brown sugar
- 1 cup white sugar
- 2 eggs (room temp)
- 2 tsp vanilla
- 2/3 cup cocoa
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp baking powder
- 2 cups flour
- as much as you'd like (danger!) of bits of heaven: white choco chips, peanut butter chips, m&m's, etc.
cream butter and sugars. add vanilla and eggs and mix well. add cocoa and mix. sift together flour, baking soda, baking powder and salt. add to chocolate mixture. fold in bits of heaven. drop by mini ice cream scoop (about 1 rounded tbsp) onto baking sheets lined with parchment. bake for 15 minutes at 350*.
note: since everyone's oven is different, you'll have to find your perfect baking time over a few batches. i bake using convection heating in my oven and, after lots of trial and error, have figured out that 12 minutes with convection at 350* is perfect. if you're using a regular oven, 15 minutes at 350* will give you cookies on the crunchier side. i imagine that shortening the baking time means less crunchy? i hope that helps.
enjoy!

Hi! Thanks for stopping by my blog! I've just scrolled through yours and you have some great photography skills already! I love the spoonful of cookie dough shots & the way the focus is different in the two pictures! Look forward to seeing more!
